The 12-Hour Extraction

Blanch the pork bones in boiling water for 15 minutes to remove impurities. Drain and scrub each bone clean under cold water. Return to a clean pot, cover with fresh water, and boil vigorously for 12 hours. Top up water as needed, but let it reduce in the final 2 hours for maximum intensity.

Tare Preparation

While the broth works, prepare your seasoning base (Tare). Combine high-quality soy sauce, mirin, and sea salt. Infuse with kombu and katsuobushi for a deep umami profile that will cut through the richness of the pork fat.

Noodle Precision

Boil fresh ramen noodles for exactly 45-60 seconds for a 'katamen' (firm) texture. The firm bite is essential to stand up against the heavy broth.

The Art of Assembly

Place 30ml of tare in a warmed bowl. Ladle in 350ml of the boiling Tonkotsu broth and whisk slightly. Fold the noodles into the broth, lifting them to create a platform. Top with thin chashu slices, half an egg, scallions, and a sheet of nori.
