Masterclass Instructions
Preparation of Shari
Wash the rice until the water runs clear. Cook with a 1:1 ratio. While hot, fold in the sushi vinegar (awase-zu) using a 'cutting' motion with a shamoji to avoid crushing grains. Fan rapidly to achieve a glossy finish.
The Art of the Cut (Sashimi)
Using a single, continuous stroke of your yanagiba, slice the fish against the grain. For Nigiri, aim for 'neta' slices that are 1cm thick and 5cm long.
Assembling Nigiri
Wet your hands with 'tezu' (vinegar water). Shape 20g of rice into an oblong. Apply a small dab of wasabi to the fish, place the rice on top, and use your fingers to gently compress and shape the piece.
The Moriawase Plating
Arrange the pieces on a traditional wooden platter (Geta). Group by flavor profile—starting with lighter white fish and moving towards richer, fatty tuna (Otoro). Garnish with micro-shiso and fresh ginger.

Tension Management
Roll the bamboo mat (makisu) firmly but avoid 'choking' the rice. The grains should still have air between them to maintain a light texture.
The Seal
Leave a 1cm border at the top of the nori. Do not use water to seal; the moisture from the rice is sufficient for a professional finish.
